Oven Roasted Tomatoes

Here’s a simple way to use extra tomatoes – great in salads or with eggs.

 

Recipe:

 

Slow roast halved tomatoes with olive oil, garlic, salt and pepper at 325 degrees F for about 1 hour. Make sure to scrape all those juices from the roasting pan and throw in a vinaigrette!
