Hippie Chickpea Salad

Mix up your salad! This healthy vegetarian meal packs a perfect blend of flavors and textures. 
 
Ingredients: 
 
Lettuce mix of choice 
1 can garbanzo beans, drained and rinsed 
2 medium carrots, shredded 
1 avocado, diced 
1 cup alfalfa sprouts 
Sunflower seeds 
¼ cup tahini 
Juice of ½ lemon 
2 Tbs olive oil 
1 tsp sesame oil 
1 clove of garlic, grated 
¼ tsp salt and pepper 
 
Recipe: 
 

  1. In a large bowl, combine assorted washed and dried lettuces. 
  2. Top with garbanzo beans, shredded carrots, diced avocado, alfalfa sprouts and a sprinkle of sunflower seeds. 
  3. Whisk together tahini, lemon juice, olive oil, sesame oil, grated garlic and salt and pepper. Add 3-5 Tbs water to get a drizzle-able consistency, then dress your salad.
