Green Bean Mushroom Toast

A simple, satisfying brunch! Garlicky green beans and mushrooms make the perfect savory toast topper.


1. Sauté 1 sliced shallot and 2 sliced garlic cloves in olive oil until softened.

2. Add 1 cup sliced green beans, 1 cup sliced mushrooms and a few sprigs of thyme. Sauté for 5-8 minutes or until tender.

3. Add 1 Tbs butter and a splash of sherry vinegar; stir to coat. Season with salt and pepper to taste.

4. Spoon mixture on toasted, buttered bread and serve with a fried egg. Garnish with crumbled feta or goat cheese and some chopped parsley.
