Roasted eggplant rounds out the flavor of this delicious pasta dish. A weeknight dinner winner!
Recipe:
- Roast cubes of eggplant with lots of olive oil and salt until soft and tender.
- Add to a sauté of diced onion and ground lamb.
- Stir sautéed mixture into your favorite cooked pasta with a dollop of Greek yogurt, lots of chopped dill, crumbled feta and some lemon zest. Season with salt and pepper to taste.
