Curried Cauliflower Soup

It’s easy to turn your favorite cauliflower into a hearty pureed soup. Sprinkle roasted pepitas and fresh herbs on top for added texture!

 

Ingredients:

 

1 diced onion

1 small head cauliflower, chopped (about 4 cups)

4 cloves garlic

4 Tbs olive oil

½ tsp salt

½ tsp pepper

1-2 Tbs curry powder

4 cups chicken or vegetable stock

 

Recipe:

 

  1. In a large pot, sauté onion, chopped cauliflower and garlic in olive oil for about 8-10 minutes or until onions begin to soften.
  2. Add salt and pepper, curry powder and chicken or vegetable stock. Bring to a boil; reduce to a simmer and cook until cauliflower is very tender, about 18 minutes.
  3. Puree and garnish with a drizzle of olive oil, fresh cracked pepper, roasted pepitas and your favorite fresh herbs.
