Cheesy Rice Stuffed Peppers

Fill 'Sweet Stuff' peppers with a comforting combo of rice and cheeses. Be sure to sprinkle in freshly picked parsley!

 

Recipe:

  1. In a large bowl, combine 1 cup ricotta, ½ cup grated parmesan, 1 cup cooked brown rice, 2 Tbs chopped parsley, salt and pepper; stir well to combine.
  2. Cut the tops off 6 'Sweet Stuff' peppers and scoop out seeds and membranes.
  3. Fill peppers generously with rice mixture and bake at 350 degrees F for 45-60 minutes or until browned and pepper looks just softened. Garnish with extra black pepper.
