Butternut Squash Steaks

Dress up rounds of your favorite winter squash with a drizzle of browned garlic butter!

 

Recipe:

  1. Peel the neck of 1 butternut squash and cut into 3/4” thick rounds.
  2. Heat 1 Tbs avocado oil in a cast iron pan and add squash steaks. Cook over medium high heat, turning every 5 minutes. Season both sides with salt and pepper and cook until nicely caramelized and tender.
  3. Add 2 Tbs butter, a few sprigs of thyme and 3 cloves of garlic to the pan. Let cook a few more minutes, turning squash over to coat in butter. Serve with a bit more salt and pepper and some of the browned garlic butter drizzle.
