Kohlrabi Soup

  • 1 1/2 lbs of fresh kohlrabi, chopped
  • 2 small carrots, chopped
  • 4 small potatoes, chopped
  • 7 tablespoons of EVOO
  • 1 large white onion
  • 2 large cloves of garlic, chopped
  • 3 strips of bacon


Peel the kohlrabi, completely removing the tough green skin. Cut into 3/4" pieces

In a soup pot, add the EVOO, garlic, onions, and bacon and cook quickly under medium heat for 4-5 minutes.

Add the remaining ingredients; carrots, potatoes and kohlrabi. Blend all the ingredients well in the soup pot. Add 2 quarts of cold water, and increase heat to a slow boil. Once soup is boiling, reduce heat to low, and cook covered for 1 hour.

When finished, remove from heat, remove bacon, and flavor to your taste with salt and pepper.

Serve with nice artisan bread.
