Fresh Tomato Salsa Recipe

Fresh salsa can be made just before serving with chips or as a condiment for a main course. When chopping fresh hot peppers, add the seeds to this fresh salsa for more heat.

Finely mince 4 hot peppers, include seeds (discard seeds for less heat) and combine in a small bowl with 1 sweet pepper and 8 vine ripe Ensalada tomatoes, both coarsely chopped. (Can be done in a food processor.) Squeeze in the juice from two limes, Add 2 finely minced garlic cloves, fresh parsley and cilantro to taste. Season with salt and freshly ground pepper.

  • To entertain kids on their holiday break, have them make bird seed ornaments to hang from outdoor trees. Using pieces of cardboard, cut out snowflake shapes, Christmas tree or angel shapes, or any other design. Each ornament should be anywhere from a two to five inches long and just as wide. Make a hole at the top of each cutout shape and slip a length of raffia or twine through it so it can be hung.

    Next, using peanut butter, coat each side with a good layer. Then pour out birdseed into a large bowl and sprinkle each side with the seed. Hang on a tree or shrub near a window so kids can enjoy watching the birds come and feast on their ornaments.
