Fast Food Garden - Salsa

Ingredients:
4 'Little Mama' tomatoes, chopped
1 'Texas Supersweet' onion, chopped
3 'Evergreen Long White Bunching' scallions, chopped
1 'Big Guy' jalapeno, very finely chopped
½ cup 'Calypso' cilantro, finely chopped
1 fresh lime, juiced
Salt & Pepper to taste

Directions:
Blend all ingredients in medium bowl and serve with chips.

  • Don’t cry for me onion peeler! Here are three easy ways to prevent the tears from flowing when peeling, cutting and chopping onions.
    * Refrigerate the onions first. The chill slows down the release of the volatile gases that irritate eye membranes.
    * Peel and cut onions in a basin of cold water. Doing so keeps those eye irritating odors out of harms way.
    * If you are really sensitive try wearing a scuba mask, ski mask, or swimming goggles. It may look goofy, but this is the best way to protect your eyes. By simply preventing the gases from reaching your eyes, you can prepare a bushel of onions without shedding a single tear!
