Asparaguses are perennial vegetables, so you just plant them once and enjoy season after season of succulent spears. Start seeds indoors in early spring; transplant seedlings to garden in May. In 2 years, you'll have a light crop and a regular crop thereafter. Long after harvest, the graceful, feathery green foliage is still attractive.
Sow asparagus seeds (to produce roots) outdoors in early spring one year before setting roots. Cover seed with 1/2"of soil.
How to Grow
Set asparagus roots as early in spring as soil can be worked in trenches 6-8" deep and 12-15" wide. Space roots 18" apart in row. Rows of asparagus plants should be 21/2-4’ apart.
Begin to harvest the third spring after initial planting. (Harvest the second spring after planting if you start from 1-year roots; harvest the first spring after planting if you start from 2-year roots.) Pick for two weeks during first harvest season. Pick for 3 weeks during second harvest season. After the asparagus plants have fully grown, harvest for 4 to 6 weeks. Steam, grill, or saut� tender shoots.
