SOW in full sun in rich, well-drained soil in early spring or late summer. For optimum flavor, grow in cool weather. Sow evenly and thinly. Cover with 1/4" of fine soil; firm lightly and keep evenly moist.
How to Grow
Seedlings emerge in 7-14 days. Provide plants with plenty of water if conditions get dry. Pick about 35 days after sowing, and protect with floating row covers to keep flea beetles away.
Pick arugula leaves when they reach 4-6" tall- about 35 days after sowing. Store in plastic bags and refrigerate for up to 5 days. Pull plants when they begin to flower and set seed, then cut off usable leaves at the base and compost the rest. Use young arugula leaves in salads, and cook more mature leaves as greens. Flowers are also edible.
