  • To harvest rhubarb, hold each stalk near the base, then twist and pull simultaneously until the stalk separates from the plant. Don't cut or snap the stalk above the ground. This causes the stalk to "bleed", which invites rot and disease problems that eventually weaken the plant, reducing production in the future. Remember to eat only the stalks, as rhubarb leaves are toxic.
