Coriander is what the seeds are called. Cilantro is the green plant that produces the coriander seeds. Sow coriander seeds outdoors in full sun after danger of frost. In frost-free areas, sow from fall to early spring. Grow coriander seeds with herbs and vegetables in the garden or in a container. Sow seeds thinly and cover with 1/4" of fine soil. Firm lightly and keep evenly moist. Cilantro seedlings emerge in 14-21 days.
How to Grow
Thin to stand about 12" apart. Sow coriander seeds every 3 weeks during the growing season to ensure a steady supply.
Harvest the cilantro leaves before the flower stem has developed. Harvest the coriander seeds once they start turning from green to gray-brown. The leaves do not dry well, so use them fresh in Asian and Mexican dishes; the taste is better than the smell. The ripe seeds are an important ingredient in curry. They are also used as a pickling spice or sugar-coated and eaten as a candy.
