Sweet Roasted Scallions

  • Preheat oven to 400°.
  • Slice a dozen bunching scallions into 1/2" slices and toss with 4 tbsp olive oil, 1 tbsp balsamic vinegar and 1 tbsp chopped fresh rosemary.
  • Place in a baking dish with a few tbsp water, cover and bake for 30 minutes.
  • Uncover, stir and continue baking until scallions are browned around the edges, about 15 minutes more.
