Has anyone tried the fruit kimchi or tried using wine as a brine. I would like to hear about your experience.

Does anyone have any advice based on your past experiences with either sets, or transplants?  I don't think it would be possible to ever have too many onions, so I want to plant a lot and have lots left for storage.
