Tomatoes can be done by boiling jars in a stock pot. Beets are another excellent canning vegetable. I love getting them small and canning those.

Five plants produced a LOT of cucumbers and the pickles turned out so great that I always have a jar of them sitting in my fridge. ;)

Large, paste tomatoes--taste great, very meaty.  I don't eat tomatoes raw, so I can't offer an opinion on eating them in a salad, but I've been canning sauce with them for two years, and I'm very happy.

Doing so seems to improve the flavor of the canned green beans. This year (2013), our mix included six varieties: Burpee's Stringless Green Pod, Bush Blue Lake, Contender, Maxibel, Provider, and Strike.
