When seeds are sown by hand, we tend to "over-sow." When seeds start to germinate, the seedlings can get too crowded. Seedlings will get spindly, which tends to encourage "damping off." Thinning means pulling out the weaker seedlings and leaving the vigorous seedlings, allowing for enough space in-between.
